Eggplants are very healthy, tasty, and very easy to prepare vegetables that can be used to make many delicious and healthy dishes. They are also canned, pickled, and made into salads for the winter.

Cook Yevhenia Karpiuk shared on Instagram a recipe for a delicious eggplant appetizer that you can prepare in just 30 minutes.

Ingredients:

  • eggplant - 1-2 pcs.
  • salt, pepper - to taste
  • olive oil
  • Italian herbs

Sauce:

  • tomato - 1 pc.
  • garlic - 1 clove.
  • basil - a few sprigs
  • salt - to taste
  • oregano - to taste
  • olive oil - 1 tbsp.

What to serve with:

  • mozzarella - 100 g
  • cherry tomatoes - 10 pcs.
  • Parmesan cheese - 100 g
  • basil - a few sprigs
  • quail eggs - 4-5 pcs.

Method of preparation:

1. Wash and cut the eggplants into slices, make cuts on them. Salt, sprinkle with herbs, drizzle with oil and bake for 30 minutes at 180 °C.

2. Sauce: chop the tomatoes and put them in a blender, add the garlic, basil, salt and blend until smooth.

3. Pour the prepared sauce into a saucepan, add olive oil and cook until the sauce becomes thick.

4. Take out the eggplant, flatten it with a fork and add the tomato sauce. Top with grated mozzarella, cherry tomatoes, eggs and Parmesan cheese.

5. Put it in the oven for 10 minutes and serve.
