How to cook eggplant with minced meat: a variant of a seasonal dish
Eggplant is a seasonal summer vegetable that can be used to prepare a wide variety of dishes. The texture of the product is very dense on the outside and soft on the inside, so it is ideal for baking. It is especially delicious with minced meat.
The idea of cooking a hearty eggplant with minced meat was published on the Instagram page of food blogger Oleksandra Fidkevych (fidkeaxa).
Method of preparation:
1. Cut the eggplant in half and make crosswise cuts.
2. Drizzle with oil and salt, and put in a preheated oven for 10 minutes.
3. Chop the onion and two cloves of garlic.
4. Fry in vegetable oil, and add the minced chicken.
5. Stir until smooth, add tomato juice (or paste with water), salt, pepper, and oregano.
6. Stew a little.
7. Take out the eggplants, and crush them a little with a fork.
8. Put the minced meat and cheese on top.
9. Put in the oven for another 10 minutes.
