How to cook eggplant deliciously: a budget dish idea
Eggplant is a strong and dense vegetable that can be a great base for preparing a hearty dish on its own. It can be combined with absolutely any ingredient. Of course, it is best to choose seasonal products and meat.
The idea of cooking pickled eggplant was published on the Instagram page of food blogger Polina (polli_cooking).
Ingredients:
- eggplant - 2 pcs.
- minced meat (delicious with turkey fillet) - 300 g
- tomatoes - 2 pcs
- feta - 50-70 g
- olive oil
- salt and spices to taste
Method of preparation:
1. Cut the eggplant in half, and take out the middle.
2. Put the minced meat in a preheated and oiled frying pan and fry.
3..Add the eggplant and tomato center, salt, and spices (my favorite are "Italian herbs").
4. Fry for 10 minutes.
5. Put the halves in the mold and fill with the filling.
6. Put the feta on top.
7. Put in the oven at 180 degrees for 30-35 minutes.
8. Cover the first 15 minutes with foil.
9. Pour teriyaki sauce well before serving.
