How to cook delicious stewed cabbage according to an old Ukrainian recipe: tips from the cook

Cabbage is a very healthy and tasty autumn vegetable that can be the main ingredient for preparing various dishes, ranging from borscht, light soups, salads, pancakes, cutlets, pies, cabbage rolls, and sauerkraut.

Culinary expert Anatoliy Dobrovolsky shared on Instagram an old Ukrainian recipe for delicious stewed cabbage with ham, sour apples and spices, the taste of which will definitely surprise you.

Tip: Mash the cabbage well with your hands and use melted butter to cook the dish.

Ingredients:

  • Cabbage - 1 pc.
  • Onions - 2 pcs.
  • Sour green apples - 4-5 pcs.
  • Pork or ham - 500-700 g
  • Butter - 200 g
  • Ground cumin - 1/2 tbsp. l
  • Coriander - 1/2 tbsp. l
  • Broth or water - 1-1.5 liters
  • Salt, pepper - to taste
  • Lemon juice - to taste
  • Sour cream and herbs for serving

Method of preparation:

1. Cut the cabbage in half and chop.

2. Place in a large bowl, season with salt and mash well with your hands to release the juice.

3. Peel and slice the apples, put them in water, add lemon juice to prevent them from darkening.

4. Cut the ham into thin slices. Dice the onion.

5. Melt the butter, pour it on the bottom of the pan, add the onion, put a layer of cabbage on top, then apples, cabbage, pork, melted butter and so on until you run out of ingredients. Pour in the broth or water and simmer the cabbage over low heat for about two hours.

Serve the cabbage with sour cream and greens.
