  • garlic – 3 heads
  • thyme (preferably fresh, but dry is also good)
  • bay leaves – 2-3 pieces
  • ground black pepper, salt
  • oil (preferably olive)
  • a casserole dish or baking sleeve
  • you can add a few sprigs of rosemary and 1/2 celery root

Method of preparation:

1. Brush the chicken with oil, sprinkle with pepper and salt, and rub well.

2. Salt it in the middle, put bay leaves and a small bunch of thyme.

3. Wrap in plastic wrap and leave to marinate for an hour, two, three, or overnight.

4. When the chicken is marinated, cut off the top of the garlic heads, and season with salt and pepper.

5. Put a few cloves of garlic in the middle of the chicken, and put the whole heads (without the tops) in the baking sleeve with the chicken and garlic.
