Cooking buckwheat is not the best option for health. It is much healthier to steam it overnight. This is the opinion of nutritionist, Doctor of Medical Sciences, Professor Oleksii Kovalkov.

In a video he posted on YouTube, the expert said that buckwheat can be called the "queen of porridge" because it contains ten times more nutrients than, for example, the same hercules. However, he also noted that it all depends on the cooking method.

The doctor claims that not all people know how to cook this cereal to get the most out of it. And boiling buckwheat is not the best option. The fact is that carbohydrates, which are so useful for porridge, are contained inside the cereal, and during cooking, the entire kernel core comes out.

"As a result, carbohydrates enter the bloodstream very quickly, saturating it with sugar. This is not good. Because these carbohydrates will be absorbed in 20 minutes, your blood sugar level will drop in two to three hours, and you will be hungry again," Kovalkov said.

Instead of boiling, the expert advises steaming buckwheat overnight with water or kefir - this way, he says, the kernels will remain solid and not crumble, and the body will need more time to digest the shell. As a result, carbohydrates will be absorbed gradually. This kind of cereal will be good for the body, the nutritionist says.

At the same time, he noted that he does not advise eating buckwheat every day. The expert clarifies that the diet should be varied, so it will be enough if you eat buckwheat only three times a week.
