The asparagus season is in full spring. This healthy and low-calorie vegetable can be cooked in many ways: boiled, fried, steamed, baked in the oven, and even eaten raw and added to salads.
Food blogger Svitlana shared a recipe for baked asparagus with pancetta on her Instagram page (svitlana_klymovska) and on her website (klymovska.com).
A few tips before cooking:
- Before you start cooking asparagus, you need to prepare it. To do this, break off the thick root parts, and then peel it with a knife from the middle of the stem to the root part.
- It is important that the asparagus retains its color and crunch after cooking.
- Do not add acidic ingredients such as lemon juice or vinegar during cooking. Do this only before serving.
Ingredients:
- asparagus
- pancetta
- olive oil
- pepper
- lemon juice and zest for serving
Method of preparation:
1. First, wash and prepare the asparagus, namely break off the root parts and peel it.
2. Cut the pancetta into thin slices. Wrap each asparagus stalk with it.
3. Put the asparagus on a baking sheet covered with parchment, drizzle with olive oil and pepper.
4. Bake at 170 degrees for 10-12 minutes. The pancetta should be crispy and the asparagus should not lose its color.
5. Put the baked asparagus on a plate, pour the juice over and sprinkle with lemon zest.
