But not just a pie with a filling, but a real quiche – an open pie in which pieces of meat, cheese, fish, vegetables, and even fruit are baked. The dough for quiche is usually not heavy, but light shortcrust or puff pastry.

1. Classic quiche
Ingredients:
- Shortcrust pastry – 250 g
- Dry-cured pork brisket – 150 g
- Olive oil – 20 ml
- Sour cream 42% – 200 g
- Chicken egg – 3 pcs
- Leek – 200 g
- Cheese – 200 g
- Salt, ground black pepper – to taste
How to cook:
- Finely chop the pork and leeks (the white part of the onion), fry them together in olive oil.
- Grate the cheese, mix sour cream, eggs, salt, pepper, a third of the grated cheese, and fried pork in a bowl.
- Roll out the finished dough and put it into a mold so that there are sides, and make punctures in the dough with a fork, pour the filling, and sprinkle the top of the pie with cheese.
- Put in the oven for 30 minutes at 180 °C.
2. Quiche with sorrel, blue cheese, and bell pepper
Ingredients:
For the dough:
- Flour – 2 cups
- Butter – 125 g
- Egg – 1 pc
- Water (ice) – 3 tbsp
- Salt – 1 pinch
For the filling:
- Blue mold cheese – 100 g
- Fresh sorrel – 200 g
- Sweet red pepper – 100 g
- Large eggs – 2 pcs
- Cream – 150 g
- Cream cheese – 80 g
- Hard cheese – 70 g
- Salt, pepper – to taste
Method of preparation:
- First of all, grate the butter.
- Next, sift the flour, add salt and butter, and mix well to make crumbs.
- Add the egg, water and knead the dough well.
- Take a baking dish with sides and put the dough in it, make punctures with a fork, and refrigerate for 1.5 hours.
- For the filling: wash the sorrel, and put it in a frying pan with butter, salt, pepper, and stew.
- Peel the seeds from the peppers and chop them.
- For the filling: beat the eggs with cream cheese, salt, and pepper and whisk well until smooth.
- Take out the finished dough, put the sorrel, put the pepper on top, pour the filling, and put it in the oven for 30-35 minutes at 180 °C.
- Sprinkle the finished pie with grated cheese.
