How to cook a flavored pork knuckle in an original way: the perfect recipe from the chef

Pork knuckle is a pork meat dish that is cooked and served whole. One of the most delicious shanks can be found in Germany. There, it is combined with specialty beer, as well as salads and baked vegetables. Ukrainians are very close to this delicacy, as we also love pork.

Celebrity chef Yuriy Kovryzhenko shared the recipe for authentic German shank on his Facebook page.

Cooking pork knuckle

Ingredients:

  • shank
  • water - 2 liters
  • light beer - 2 liters
  • salt - 20-25 grams
  • cloves - 1 tsp.
  • bay leaf
  • spices (paprika, coriander) - to taste
  • allspice - 1 tsp.
  • cinnamon stick - 5 pcs
  • mustard and honey - to taste

Method of preparation:

What to serve with pork knuckle - beer and baked potatoes
  1. Fry the shank, wash it, and dry it with a non-woven towel.
  2. Mix water and beer in a saucepan, add all the spices. Cook the shank for 2 to 3 hours, depending on its size, over low heat.
  3. Remove, collect excess moisture and fat, and dry again with a towel.
  4. Mix mustard and honey in equal proportions. Apply this glaze to the shank and put it in the oven.
  5. To form a crust, choose a temperature of 200-220 degrees and bake for 20-25 minutes. Serve with potatoes, salad, and, of course, beer.
