Eggs Benedict is a popular breakfast in the world often served in respectable hotels and in the homes of all "important people." The dish is a sandwich based on toasted toast with poached eggs, ham, or bacon. An obligatory component of Benedict is Hollandaise sauce. Not everyone can cook it, but if you know some of the nuances, it is quite possible.

Ingredients:
- English muffin or bread
- Bacon - 2 pcs.
- Poached egg
For the sauce:
- Egg yolk - 3 pcs.
- Butter - 60 g
- White wine/wine vinegar - 1 tbsp
- Salt and pepper
Method of preparation:
1. Fry the bacon and bread.
2. Put the pan in a water bath, and add the egg yolks, vinegar, or wine.
3. When the sauce begins to thicken, gradually add the butter while continuing to whisk. Once it reaches the desired consistency, remove it from heat.
Important: the sauce should be cooked quickly and over low heat to prevent the yolks from curdling.
