How to bake eggplants quickly: a simple appetizer option

Eggplant is most often used for stuffing. But this product can also be baked simply in slices. It turns out very quickly and deliciously. Especially if you add a spicy tomato sauce.

The idea of cooking eggplant was published on the Instagram page of food blogger Emiliia Yevtushenko (emiliya.yevtushenko).

Method of preparation:

1. Wash the eggplants, and cut them into equal rings.

2. (You can cover with salt and set aside for 10 minutes to prevent bitterness, then rinse and dry.

3. Make the cuts.

4. Prepare the sauce: mix tomato juice, Italian seasonings, and herbs, and put on the eggplant.

5. Then slice the mozzarella and put it on top of the filling.

6. Bake for 20-25 minutes in a preheated oven at 190 degrees.
