  • 400 g of 5% cottage cheese
  • 2 egg yolks
  • 1 tbsp of sugar (or other sweetener)
  • 2-3 tbsp of flour (mine is from durum wheat)
  • a pinch of salt
  • vanillin
  • oil for frying

1. It is better to use cottage cheese in a block or creamy form, so that the syrniki will be easy to mold and keep their shape. If you have lumpy cottage cheese, you need to grind it through a sieve.

2. Mix the cottage cheese, egg yolks, sugar, salt and vanilla, add the flour.

3. Make a sausage out of the mass and roll in flour, cut into pieces of the same size.

4. Form each piece into syrniki.

5. To make it comfortable, moisten your hands with water, otherwise the dough will stick to your hands.

6. If you make too many syrniki, you can freeze some of them and cook them next time.
