Very often, during cooking, syrniki fall apart and burn. This is because of the rather liquid consistency of the dough. And it is the eggs that soften the cottage cheese. Therefore, they need to be added correctly.

The idea of making syrniki that don't fall apart was published on the Instagram page of food blogger Olga with the nickname olya_pins. According to this technology, only two egg whites are added to the dough, without yolks. That's why the mass is fluffy and holds its shape.

1. It is better to use cottage cheese in a block or creamy form, so that the syrniki will be easy to mold and keep their shape. If you have lumpy cottage cheese, you need to grind it through a sieve.

2. Mix the cottage cheese, egg yolks, sugar, salt and vanilla, add the flour.
