How much soda to add to pancakes to make them fluffy: we share the technology
To make the pancakes fluffy, they are cooked with a mixture of kefir and soda. And it is the latter ingredient that raises quite a few questions. If you add too little baking soda, the dough will fall off, and if you add too much, it will turn out to be bruised. That's why there's a clear gram scale here.
The idea of making fluffy pancakes with baking soda was published on the Instagram page of food blogger Vita with the nickname v.vanilinka.
Ingredients:
- 500 ml of buttermilk
- 60 g of sugar
- 350-380 g of flour
- 1 egg
- 6 g of baking soda (1 tsp without a slide)
- a pinch of salt
- oil for frying
Method of preparation:
1. Mix the kefir with the egg, sugar and salt. Add the flour (350 g) and baking soda and mix until smooth. The dough should be thick enough to slowly/lazily drip off the spoon in a single ribbon, and not blur, but keep its shape.
2. If the dough is too thin, add more flour.
3. Set it aside for 10 minutes to allow the baking soda to work. And do not stir anymore.
4. Heat a frying pan over medium-high heat, add 2 tbsp of oil and spoon the dough onto the hot pan.
5. Gather the dough near the edges of the bowl without stirring.
6. Turn the pancakes over and reduce the heat to make sure they are well cooked.
7. Put the pancakes on a paper towel to remove excess fat. Serve with jam.
