Cheesecakes made from homemade cottagecheese are a delicious breakfast and dessert option. In order for them to be tender, fluffy and not fall apart during cooking - special attention should be paid to cottage cheese and eggs.
Foodblogger Eugenia Karpiuk (evgeniyakarpiuk) on her Instagram page shared a recipe for successful cheesecakes, and also told how to add eggs correctly and how much to add.
A few tips:
1. The cottage cheese should not be too wet, if it is grainy - it is better to whip it with a blender.
2. If you have a large egg, it is better to use only the yolk.
3. Raisins should not be soaked, so that there is no excess moisture.
4. When the mass for cheesecakes is ready, it is better to leave it to stand for a while - 20 minutes will be enough. During this time semolina and raisins will absorb moisture and curd will be excellent consistency.
5. Flour in cheesecakes can be replaced with semolina.
Ingredients:
- cottage cheese - 400-500 g
- eggs - 1 pc
- salt - a pinch
- sugar - 1-2 tbsp.
- semolina / flour - 2 tbsp. tbsp.
- raisins (optional)
Method of preparation:
1. Alternately mix all the necessary ingredients until homogeneous. Leave the mixture for 20 minutes.
2. Make cheesecakes by dipping them in flour.
3. Fry cheesniki on a frying pan.
