Honey cake with cherries: how to make a traditional dessert in a new way
The classic flavor of the Medovik cake is a ruddy honey cake covered with a delicate cream. This dessert has no competitors. But to improve the taste of this pastry, you can add juicy sour cherries, which are in full season right now.

Ingredients:
- sugar - 150 g
- honey - 70 g
- butter (melted) - 100 g
- soda - 7 g
- eggs - 2 pcs
- flour - 410 g ⠀
Ingredients for the cherry filling:
- frozen cherries - 160 g
- sugar - 60 g
- corn starch - 10 g ⠀
Ingredients for the cream:
- sour cream 20% - 700 g
- powdered sugar - 100 g
- honey - 1 tbsp
Method of preparation:
1. Melt sugar, honey, and butter, and add baking soda.
2. Stir, add the eggs beaten with a fork, and then the flour.
3. Knead the dough and divide it into equal parts (10-12 parts).
4. Roll out each piece, cut the edges with a ring, split with a fork, and bake for 6 minutes at 160 degrees.
5. Bake the last few cakes together with the scraps.
6. Heat the cherries with sugar and starch, stirring constantly.
7. Bring to a thickening and cool. ⠀
8. For the cream, beat sour cream, honey and powdered sugar. ⠀
9. Assemble the cake (leave a little cream to decorate the cake), then cover it with cling film and put it in the refrigerator for 4-6 hours. ⠀
10. Grind the dough scraps in a blender.
11. Spread the finished cake with the remaining cream and sprinkle with crumbs. ⠀
