Honey cake in a new way: be sure to add poppy seeds and coconut flakes
Honey cake or Medovyk is a popular cake made of fluffy honey cakes that every housewife knows about. This dessert is often prepared for family celebrations and as a gift for relatives. In addition to the classic recipe, it will be delicious to add poppy seeds and coconut flakes.
The idea of making Medovyk with poppy seeds was published on the Instagram page of food blogger Olha Kobyk (oliakobyk). The cream requires only 3 ingredients.
Ingredients for poppy seed coconut cake:
- dry ground poppy seeds - 125 g
- water or milk - 230-250 ml
- whites - 3 pcs.
- fine sugar - 130 g
- white coconut flakes - 130 g
- eggs - 1 g
- yolks - 3 pcs.
- sugar - 140 g
- vanilla sugar - 10 g
- flour - 40 g
- baking powder - 4 g
- butter - 100 g
Ingredients for honey cakes:
- eggs - 3 pcs.
- salt - 1 pinch
- baking soda - 7 g
- sugar - 100 g
- honey - 100 g
- vegetable oil - 100 ml
- 2.5% kefir - 200 ml
- flour - 280
Ingredients for the cream:
- butter - 250 g
- boiled condensed milk - 300 g
- 25-30% sour cream - 200 g
Method of preparation:
1. Add water to dry ground poppy seeds.
2. Stirring, bring the mixture to a boil over low heat and cook for a few minutes.
3. Set them aside to cool.
4. For the coconut part, separate the yolks from the whites.
5. Beat the whites with a mixer and add a little sugar.
6. Beat until high peaks.
7. Add coconut flakes to the egg mass and mix with a spoon.
8. Form 5 strips from this mass and place on a baking sheet.
9. Add 1 egg, the remaining yolks, sugar, and vanilla sugar to a bowl and beat with a mixer for 5 minutes until the mixture becomes light.
10. Combine the cooled poppy seed mixture with the egg mixture and mix with a spoon.
11. Combine flour with baking powder and add to the dough.
12. Add melted chilled butter.
13. Pour the poppy seed dough into the gaps between the coconut one.
14. Bake the cake at 180 degrees for 25 minutes.
15. For the honey cake, combine eggs, a pinch of salt, baking soda, sugar, and honey, and beat with a mixer for 8-10 minutes.
16. Add vegetable oil and kefir, mix with a mixer at low speed, add flour and mix again until smooth.
17. Bake 2 cakes at 180 degrees for 20-23 minutes.
18. For the cream, beat butter with a mixer and then add boiled condensed milk one tablespoon at a time.
19. Then add sour cream in portions.
20. Assemble the cake in the following order: honey cake + cream + poppy seed and coconut cake + cream + honey cake + cream.
21. Garnish with coconut flakes.
