Ingredients:
- 3 kg of young zucchini
- 1 kg of onions
- 1 kg of carrots
- 1.5-2 tbsp of salt
- 1 tbsp of sugar
- 3-4 tbsp of tomato paste
- oil for frying
- 6-7 cloves of garlic
- a bunch of dill
- ground black pepper
- 2 tbsp of vinegar (if pickling)
Method of preparation:
1. Peel the onions, carrots and zucchini and chop them randomly. Grate the carrots. Fry the onion in vegetable oil until soft, add the carrots and fry a little more.
2. Add the zucchini, fry lightly, and season with salt.
3. The zucchini will start to release moisture and simmer in their own juices. Cover and cook over low heat for 40-60 minutes.
4. Then blend, add the tomato paste, chopped dill, mix and serve.
