1. With garlic

Ingredients:

  • zucchini - 4 pcs
  • garlic - 2 cloves
  • carrots - 2 pcs
  • tomatoes - 3 pcs
  • sunflower oil - 3 tbsp
  • salt - to taste

Method of preparation:

  1. Wash and peel the zucchini. If there are seeds, it is better to remove them. Then cut the vegetable into medium cubes.
  2. Put them in a pan with sunflower oil, add grated carrots and water, cover and simmer over medium heat.
  3. Wash and finely chop the tomatoes and add them to the pan. Season with salt and pepper, cover and simmer.
  4. Add chopped garlic at the end.

Sprinkle the dish with chopped herbs before serving.

2. With sweet pepper

Ingredients:

  • zucchini - 4 pcs
  • onions - 2 pcs
  • sweet pepper - 2 pcs
  • tomatoes - 2 pcs
  • oil - 1 tbsp
  • tomato paste - 1 tsp
  • salt and pepper - to taste

Method of preparation:

  1. Cut all the vegetables into strips. Put the zucchini in a pan and fry in vegetable oil until golden brown.
  2. Then add onions, peppers and tomato paste, close the lid and simmer for a while.
  3. At the very end, add the tomatoes, salt and pepper and simmer again over low heat for about 10 minutes.

Serve the dish hot with croutons.
