Homemade vegetable stew according to Jamie Oliver's recipe
In spring and summer, how can you do without a delicious, light, and at the same time hearty stew with seasonal vegetables? In addition to its pleasant taste, this dish is very healthy and even dietary, as the main ingredients are any vegetables of your choice.
Jamie Oliver, an English chef, restaurateur, TV presenter, and popularizer of home cooking and healthy eating, shared a recipe for a homemade stew on his YouTube channel that is very easy and quick to prepare. (To watch the video, scroll to the end of the page)
Ingredients:
- minced beef and pork (can be replaced with lentils) - each 1 kg
- smoked bacon - 100-150 g
- rosemary - 2 sprigs
- olive oil - 3-4 tbsp.
- carrots - 4 pcs.
- onions - 2 pcs.
- celery - 7-8 stalks
- zucchini - 1-2 pcs.
- tomato paste - 2-3 tbsp.
- canned tomatoes in their juice - 4 cans
- water - 4 cups
- salt, pepper - to taste
Method of preparation:
- Chop the rosemary and bacon, pour the oil into the bottom of the pan, and throw in the chopped products.
- Add the minced pork and beef, put on a small fire, mix everything well, season with salt and pepper, and fry until the meat is golden brown.
- In a blender, chop the carrots, onions, celery, and zucchini, add the mixture to the minced meat, and mix well.
- Then add 2-3 tablespoons of tomato paste and 4 cans of canned tomatoes in their own juice to the pan, mix everything well, and pour 4 cups of water.
- Leave the stew for one and a half to two hours under a lid over low heat to simmer well.
You can eat it as a separate dish, or use it as a gravy for meat or rice.
