Homemade sparkling elderberry lemonade: perfect in the summer heat
Elderberry blossoms can be used to make delicious and refreshing drinks, ideal in the summer heat: syrup, kvass, and lemonade . There is nothing complicated in making lemonade and all you need is a few simple ingredients: your favorite dried fruits, fruit, and, of course, mint. It is only important to observe the proportions and rules of fermentation.
Chef Sergei Batumsky (sergo_batumskij) shared a recipe for elderberry lemonade on his Instagram page, which can be easily prepared at home.

Ingredients for 4 liters of water:
- raisins - 20 g
- lemon - 1 pc
- rosemary - 1 pc
- elderberry flowers - 15 pcs
- sugar - 400 g (or date syrup)
- citric acid - 15 g
- mint

Method of preparation:
1. Prepare and mix all the necessary ingredients in a bottle. There is no need to close the bottle with a lid.
2. Put in a dark place for 5 days. Leave to ferment, stirring the drink periodically (about 2 times a day).

3. On the second day of fermentation, taste the lemonade and bring the sugar and acid to the desired balance.
4. After the allotted time, pour the lemonade into bottles and cool.
