A rich, spicy, tasty and very satisfying soup with cucumbers and meat is a Rassolnik that can be prepared with various meats, spices, olives and cucumbers. To make the dish very tasty, cooks advise adding cucumber brine to the soup.

Cook Maria shared on Instagram a recipe for a delicious, hearty Rassolnik made with meat, roast, and pickle brine.

Ingredients:

  • any meat, you can ribs
  • potatoes - 1-2 pcs.
  • barley - 100-150 g
  • onion - 1 pc.
  • carrots - 1 pc.
  • pickled cucumbers - 2-3 pcs.
  • tomato paste - 2-3 tbsp.
  • vegetable oil for frying
  • brine from pickled cucumbers

Method of preparation:

1. Wash the meat, put in water, cook until soft, be sure to remove the foam.

2. Dice the potatoes and put them in the pot with the meat.

3. Grate the carrots, dice the onion and fry until golden brown. Add grated cucumber and tomato paste, stir and simmer for 5 minutes.

4. Wash the barley and add to the soup, cook for 10 minutes and add the roast, stir and pour in the brine.

Serve the soup hot with herbs!
