Homemade pickled herring: how to salt fish deliciously and on a budget
Pickled herring is a delicious budget appetizer that will perfectly complement your daily and festive table. Usually, the fish is marinated with vegetables: carrots or onions, and a marinade is always prepared.
Food blogger Oksana Kretsul (oksana_kretsul) shared a recipe for homemade pickled herring with onions on her Instagram page.
Ingredients:
- herring - 550 g
- water - 80-100 ml
- onions - 2-3 pieces
- apple cider vinegar - 40-50 ml
- unrefined sunflower oil - 40-50 ml
- salt - 1-1.5 tsp
- sugar - 1 tsp
- bay leaves - 1 pc
- black peppercorns - 4-6 peas
- allspice - 1 pc
Method of preparation:
1. Rinse the fish, cut off the head and tail, remove the insides. Rinse again.
2. Make an incision along the ridge and remove the film. Rinse under running water.
3. Separate the two parts of the fillet with your hands and remove the bones.
4. Cut the fillet into single pieces.
5. Cut the onion into slices.
6. Mix water with salt, pepper, sugar and bay leaves. Bring to a boil, then cool completely.
7. Mix the cold marinade with vinegar and oil.
8. Put herring and onions in layers in a container. Pour the marinade, cover and leave in the refrigerator overnight.
