Mayonnaise is a very popular salad dressing that is best prepared at home, as this is the only way to be sure of its safety. Besides, it is very easy to do.
Culinary expert and MasterChef judge Volodymyr Yaroslavskyi shared a recipe for delicious homemade mayonnaise on Instagram that you can prepare in 10 minutes.
The cook advises adding water instead of sour cream or yogurt to the sauce during the cooking process and seasoning the mayonnaise with sugar.
Recommendations from Yaroslavsky:
1. Treat eggs very carefully before use: take only whole eggs and soak them in a solution of baking soda or vinegar for 20 minutes (1 liter of water with 25 g of baking soda or 50 g of vinegar), then rinse with water.
2. The best oil is grape seed oil. You can use refined ones: corn, sunflower, olive.
3. Mayonnaise becomes thicker in the refrigerator after 2-3 hours.
4. Instead of water or milk, you can take more yogurt or sour cream – it is very tasty and, of course, changes the taste.
5. Different types of vinegar will help to change the taste of mayonnaise.
6. Shelf life with milk – 2 days, with water, yogurt, or sour cream – 5-7 days in the refrigerator.
7. Play around with flavor by adding herbs, garlic, spices, and even soy sauce – sometimes you get incredible flavors.
Recipe for homemade delicious mayonnaise
Ingredients:
- Yolks - 2 pcs.
- Odorless vegetable oil - 300-340 g
- Mustard - 1 tbsp.
- Sugar - 1 tbsp.
- Salt - to taste
- Lemon juice - 1/3 pcs.
- Water - 50 g
Method of preparation:
1. In a bowl, whisk the egg yolks with salt, sugar, mustard, and pepper until foamy.
2. Add the oil to this mixture and mix well.
3. Finally, add lemon juice, water, or milk and mix well.
4. You can add more salt or sugar to taste.
