Homemade chechil cheese in 30 minutes: you need only two ingredients
Chechil is a popular brine cheese that is often called the brother of the well-known sulguni, or popularly known as kosichka. As a rule, the purchased one is slightly different from the homemade chechil, but many housewives still choose to make this cheese on their own. And it is not surprising because the product is easy to prepare: you need only two main ingredients and 30 minutes.

Ingredients:
- milk - 3 liters
- 9% vinegar - 125 ml
For the brine:
- salt - 200 g
- water - 1 liter
Method of preparation:
1. Heat the milk to 40 degrees, stirring constantly. Before that, it should stand for a day in the refrigerator.
2. Gradually pour in the vinegar, stirring. Cook for 5 minutes, gathering the curd mass into a lump with a spatula.
3. Put in a colander. Heat the remaining whey to 70 degrees and pour into a large saucepan.
4. Tear off a piece of cheese from the total mass and dip it into the whey for 20-40 seconds: if the cheese melts well, dip the entire cheese mass into the whey and continue working with it as if it was dough.
5. For the brine, dissolve the salt in water.
6. Form a bagel from the mass and start pulling it in circles. The process takes 10-12 minutes. Continue pulling until the threads are 5-8 mm long.
7. Dip the finished cheese in cold brine for 5-7 minutes. Secure it to the handle of the pan and braid it.
