Homemade bagels with delicious filling: we tell you what to add for the perfect dough
Buttery bagels are a great alternative to buns, cookies, pies, dumplings, and they are very easy to prepare. The most important thing is to make the right dough, not clogged and fluffy. To do this, you can cook it with milk and kefir.

- flour - 675 g
- salt - 0.5 tsp
- baking soda - 1/4 tsp.
- hot milk - 150 ml
- butter - 50 g
- sugar - 75 g
- kefir - 150 ml
- dry yeast - 8 g or 25 g of pressed yeast
Method of preparation: 1. Mix the flour with baking soda and salt.
2. Mix the sugar and butter, pour in the hot milk, and mix well to dissolve the sugar. Then pour in the buttermilk, eggs, and vanilla sugar, mix well and add the yeast and mix again.
3. Pour the flour, sugar, salt, and baking soda into the dough, and knead the dough, it should not stick to your hands.
4. Cover the finished dough with a towel and leave it in a warm place for 30 minutes, then transfer it to the refrigerator for 90 minutes.
5. Then divide the dough into 3 parts, cover with a towel again and leave for 10-15 minutes.
6. Next, roll out the ball and cut it into 12 pieces.
7. Be sure to step back from the wide edge of 1 cm and put the filling, roll the bagels.
8. Put the finished bagels on a baking sheet covered with parchment paper.
9. Brush the tops of the bagels with a mixture of egg yolk and milk.
10. Bake the bagels in a preheated 180°C oven for about 15-20 minutes.
