Hearty zucchini casserole with cheese for lunch: easy to prepare
Seasonal vegetables can be used to make not only light appetizers but also very satisfying meals. For example, a zucchini casserole with hard cheese that you can make in minutes. You don't even need meat for this dish.
The idea of making a hearty zucchini casserole for lunch was published on the Instagram page of food blogger Yuliia Senych (yuliia. senych). Grated vegetables should be well pressed.
Ingredients:
- zucchini - 1 pc.
- potatoes - 2 pcs.
- onion - 1 pc.
- carrots - 2 pcs.
- eggs - 3 pcs.
- flour - 3 tbsp.
- baking powder - 1 tsp.
- vegetable oil - 50 ml.
- hard cheese - 200 g
- salt, pepper - to taste
Method of preparation:
1. Grate the zucchini, potatoes, and carrots on a coarse grater and squeeze the excess liquid.
2. Combine in a deep bowl with chopped onion.
3. Add eggs, flour, salt and grated cheese.
4. Add baking powder and oil at the end.
5. Mix well.
6. Grease a baking dish with vegetable oil and put the dough in.
7. Put the casserole in an oven preheated to 200 degrees for 45-55 minutes.
8. Sprinkle with cheese if desired.
