Hearty potato pancake with filling: how to cook a traditional dish in a new way

Potato pancakes are one of the traditional Ukrainian dishes. Potato dough is put in portions on a heated frying pan to make crispy potato pancakes. But you can also make one big pancake, which goes very well with mushroom filling. The dish is very satisfying and can even be called a restaurant dish.

The idea of cooking a hearty potato pancake with a filling was published on the Instagram page of food blogger Khrystyna (kristy_cookery).

Ingredients:

  • potatoes - 3 pcs.
  • onion - 1/2 pc.
  • salt, pepper - to taste
  • yolk - 1 pc.
  • flour - 1 tbsp.
  • oil for frying (olive)

Ingredients for the filling:

  • mushrooms - 5-6 pcs.
  • small chicken fillet - 1 pc.
  • onion - 1/2 pc.
  • salt, pepper, dry garlic - to taste
  • a little cream
  • a lot of hard cheese

Method of preparation:

1. Fry the onion fillet, add mushrooms, spices.

2. Pour in 100 ml of cream and simmer until tender.

3. Cut the potatoes and onions into large pieces and beat in a blender.

4. Put the mixture on a plate.

5. Add the eggs and flour.

6. Heat a frying pan with oil.

7. Put the mixture in the pan.

8. Fry on one side and then turn over to the other.

9. Top with mushrooms, cheese and a little smoked ham.
