Hearty potato and zucchini pancakes for a quick lunch or dinner
Potato dishes are considered the most favorite, affordable, and budget-friendly. One of them is potato pancakes or potato pancakes. However, they can be prepared in a new way by adding cheese and seasonal zucchini to the dish. These pancakes are very satisfying and can even become a full meal.
Food blogger Ira Shafatynska (ira.shaf_cooking) shared a recipe for potato pancakes with zucchini and cheese on her Instagram page.
Ingredients:
- zucchini - 1 pc
- potatoes - 7 pcs
- cottage cheese - 200 g
- onion - 1 pc
- eggs - 1 pc
- salt, pepper
Method of preparation:
1. Grate the zucchini on a coarse grater, salt and leave to drain.
2. Meanwhile, grate the potatoes and onions on a fine grater.
3. Mix all the vegetables.
4. Add the flour, cheese, egg, salt and pepper to the vegetables. Stir to combine.
5. Fry the pancakes.
