Hearty broth with dried mushrooms: how to prepare the first dish
First courses are an important element of Ukrainian cuisine. In addition to the famous borsch and various soups, broths are an integral part of the cuisine. They are prepared mainly on the basis of vegetables, fish, mushrooms or meat. In general, it can be used as a basis for other dishes or as an independent one.
Food blogger Olha (opium_foodie) shared a recipe for mushroom broth on her Instagram page.
Ingredients:
- dried mushrooms - 50 g
- boiling water - 300 ml
- potatoes - 450 g
- carrots - 1 pc
- onion - 1 pc
- sour cream - 200 g
- flour - 1 tbsp
- processed cheese - 1 p
- paprika - 1 tsp
- water - 1.5-2 liters
Method of preparation:
1. Pour boiling water over the mushrooms and leave for 30 minutes.
2. Strain the mushrooms through a sieve, but do not pour out the liquid.
3. Cut the mushrooms.
4. Cut the potatoes. Put in a saucepan, cover with water and put on the stove.
5. Fry the mushrooms at the same time. Cook for about a few minutes.
6. Add the fried mushrooms to the potatoes. Season with salt. Cook over low heat.
7. Cut the carrots and onions. Fry the vegetables until soft. Season with salt.
8. Push the vegetables to one side of the pan and add a little oil and flour to the other side. Fry until light brown.
9. Mix the flour with the vegetables. Add paprika. Stir and fry for 1 minute.
10. Add sour cream. Stew for 3-4 minutes.
11. Grate or chop the cheese. Add to the mass.
12. Add the mushroom broth at the same time.
13. Add pepper and simmer for a few minutes.
14. Pour the mixture over the potatoes. Stir to combine.
