Hearty baked eggplants: turn out juicy and not greasy

Seasonal eggplants are a versatile product that can be used to prepare many hearty dishes on a budget. In addition to canning, making rolls and pickling, the vegetable can also be baked. This option is much more useful because it contains a minimum of fat, only simple natural ingredients.

Ingredients:

  • eggplant
  • mozzarella cheese
  • salt, pepper
  • olive oil
  • pesto sauce

Cooking method:

1. Mash eggplant a little with a rolling pin.

2. Make lengthwide cuts.

3. Season with salt and pepper and drizzle with oil.

4. Put in the oven at 180 degrees for 15 minutes.

5. Take out and put cheese inside.

6. Put in the oven for another 10 minutes.

7. Pour the sauce on top.
