Hearty and budget meatless cutlets: what seasonal vegetable to cook with
Zucchini cutlets are a great alternative to meat ones. They are low-fat and go well with a variety of side dishes. The products are very juicy and very budget-friendly.
The idea of making juicy zucchini patties was published on the Instagram page of food blogger Olha Holovina (olha.holovina). Be sure to add feta – it will be much tastier.
Ingredients:
- zucchini/zucchini – 500 g
- feta – 200 g
- breadcrumbs – 100 g
- egg – 1 pc
- onion – 1 pc
- spices – to taste
- greens – to taste
- oil
Ingredients for the sauce:
- sour cream/yogurt
- cucumber (cut into strips)
- garlic
- salt
- herbs
Method of preparation:
1. Wash the zucchini; if the skin is thick, cut it off. Also, look at the zucchini. If there are large bones, remove them as well.
2. Grate on a fine grater and squeeze out excess moisture.
3. Add feta, finely chopped onion, chopped herbs, eggs, breadcrumbs, and spices to the zucchini.
4. Mix everything well and form cutlets.
5. Put them in a frying pan greased with vegetable oil.
6. Fry over low heat on all sides until golden brown, about 5-6 minutes on each side.
7. Serve with the sauce.
