Healthy warm roasted vegetable salad for lunch: an easy recipe
If you want to prepare a delicious, hearty, and healthy autumn salad, choose seasonal vegetables, such as pumpkin, zucchini, peppers, beets, eggplant. Oil and spices will give them a bright flavor.
On Instagram, cook Kateryna Mull shared a recipe for a delicious warm vegetable salad that is not only easy to prepare but also very healthy.
Ingredients:
- eggplant - 2 pcs.
- tomatoes - 3 pcs.
- pepper - 1 pc.
- onion - 1/2 pc.
- oil - 1 tbsp.
- lemon juice - 1 tbsp
- cilantro - 4-5 sprigs
Method of preparation:
1. Wash the vegetables, cut the eggplant in half, do not peel the seeds.
2. Put the vegetables on a baking sheet, drizzle with oil and put in the oven, bake until tender.
3. Then peel the peppers, remove the flesh from the eggplant and chop everything finely, add the onion and cilantro.
4. Season the salad with oil and lemon juice, salt and pepper.
