Healthy warm pumpkin, orange and cheese salad: a recipe for a light dinner
Pumpkin is a very valuable, tasty, and healthy vegetable that contains many vitamins and minerals, and is especially good for women. It can be used to make a variety of delicious and light dishes, from soups to salads, cereals, pies, desserts, and even drinks.
Chef Yevhen Klopotenko shared a recipe for a delicious, healthy, and light pumpkin salad on his website that takes only 20 minutes to prepare.
Ingredients:
- Feta cheese - 100 g
- Pumpkin - 200 g
- Orange - 1 pc.
- Garlic - 1 clove.
- Basil - 2 sprigs
- Olive oil - 2-3 tbsp.
- Black pepper - to taste
Method of preparation:
1. Peel the pumpkin and cut it into large cubes. Put the pumpkin slices on a parchment-lined baking sheet and drizzle with olive oil, add garlic, and bake the pumpkin in a 200-degree oven until it is tender.
2. Cut the cheese into a large cube.
3. Peel the orange, zest it with a fine grater, and cut the fillet from the orange.
4. Put the pumpkin on a plate, top with the orange, cheese and basil leaves. Drizzle the salad with olive oil and sprinkle with salt and pepper.
