Beetroot is a delicious and healthy vegetable that is a real storehouse of vitamins and minerals that the body needs. In addition, it is the main ingredient in borscht and vinaigrette salad. It can also be used to make vegan pate, delicious salads, and even cutlets.

Chef Yevhen Klopotenko shared a recipe for a delicious beetroot salad with cheese and flavorful dressing on his website.

Ingredients:

  • beets – 1 pc.
  • spinach – 120 g
  • Feta cheese – 120 g
  • garlic – 1 clove
  • aromatic oil – 2 tbsp
  • salt – to taste

Method of preparation:

1. Rinse the beets thoroughly.

2. Without peeling them, put them in a large saucepan and cover with water. Add salt and cook over medium heat for 1.5-2 hours. But you can also just bake it in the oven, it will be faster.

3. Wash the spinach and pat dry with paper towels.

4. Cool the beets and then cut them into slices or large cubes.

5. Finely chop the garlic clove or pass it through a press.

6. Put the chopped beets, garlic, and spinach in a bowl. Add the feta cheese.

7. Sprinkle in pumpkin seeds, and salt to taste and drizzle with aromatic oil, mix, and serve the delicious salad.
