For many people, rice porridge for breakfast is a taste of childhood. So it's no surprise that moms loved to cook it. It is not only delicious but also very healthy. Modern cooking techniques and new ingredients can diversify the dish.
Try cooking pumpkin risotto according to the exclusive recipe of Alex Yakutov, Chef and expert of the reality TV show "On Knives" (New Channel).
Ingredients:
- Arborio rice - 80 g
- Butter - 70 g
- Diced pumpkin - 70 g
- Fresh orange - 100 ml
- Coconut milk - 100 ml
- Water - 200 ml
- Passion fruit juice - 70 ml
Method of preparation:
1. Bake half of the pumpkin cubes in the oven until tender and puree with a blender.
2. Put the butter in a thick-bottomed saucepan and heat it.
3. Add the second part of the pumpkin and fry over low heat, stirring occasionally. Add salt to taste.
4. Add a little sugar to caramelize the pumpkin and continue frying.
5. Pour the rice into the saucepan. No need to rinse it!
6. Fry everything together over medium heat so that the rice absorbs the pumpkin flavor. Do not forget to stir constantly.
7. When the rice is warm, add the passion fruit juice. Stir to evaporate.
8. Heat the coconut milk in a saucepan, and add it in small portions so that it slightly covers the rice. While the dish is cooking, stir it constantly.
9. When the risotto is half cooked, add the pumpkin puree. Continue cooking, stirring. Do not forget to add coconut milk. When ready, the texture of the risotto should not be too thick or liquid.
10. When it is cooked, remove it from the heat, add 50 g of butter, and stir. Season the risotto to taste with salt and sugar, if desired.
