Healthy pancakes with dried fruit for a snack: what flour is better to cook with
If there is very little time to cook, you can always have a snack with pancakes, because every housewife will definitely have the ingredients for them in the refrigerator. To make the products more nutritious, you can add dried fruit to the dough.
The idea of making pancakes with dried fruit for a nutritious snack was published on the Instagram page of food blogger Kateryna Brailo (ketiv). Instead of regular flour, you can add corn flour.
Ingredients:
- chicken egg - 1 pc.
- Greek yogurt or sour cream - 4 tbsp.
- corn flour - 2 tbsp + baking powder 1/2 tsp
- dried fruits: prunes, dried apricots, raisins
Method of preparation:
1. Pre-soak dried fruits in boiling water (at least 15 minutes, rinse thoroughly).
2. Beat the egg with yogurt/sour cream.
3. Add flour + baking powder and mix well.
4. Grind dried fruit, cut into small cubes, and add to the mixture.
5. Fry in a preheated frying pan, greased with ghee or coconut oil, over low heat under a lid on both sides.
