Bread is not always a heavy and high-calorie dish. It can be quite dietary and light if you make it at home with the right ingredients. And you don't even need an oven to make it – just a microwave.

The idea of making bread in the microwave was published on the Instagram page of food blogger Yuliia Nemoi (nemyo.food).

Healthy microwave bread: how to cook

Ingredients:

  • eggs – 1 pc
  • flaxseed flour – 10 g
  • oat flour (gluten-free) – 20 g
  • Greek yogurt – 60 g
  • flax seeds – 5 g
  • lemon juice – 1 tbsp
  • baking soda (you can add a tsp of baking powder) – ⅓ tsp
  • salt
  • nutmeg (optional)
  • oil – for greasing the mold

Additional ingredients:

  • cream cheese (goat cheese, ricotta, Greek yogurt, soft cheese)
  • half an avocado
  • olive oil
  • parmesan cheese
  • dried hot pepper
  • salt

What can be substituted for the ingredients?

1. Flax and oat flour can be prepared at home if you have a coffee grinder.

2. I use gluten-free oat flour, you can take regular flour or replace it with whole wheat rice flour.

3. Instead of Greek yogurt, use soft cottage cheese or thick yogurt without additives.

4. Instead of flax seeds, use other seeds or mix several.

5. Instead of baking soda, add ½ tsp of baking powder.

6. To enrich the flavor of the bread, you can add spices and herbs, and I like this version of bread with nutmeg the most.

7. If you don't have a small baking dish, a cup with smooth edges or a bowl will do just fine.

8. I used avocado oil to grease the mold, but you can also use coconut oil or ghee.

1. Break an egg into a bowl, add yogurt, mix.

2. Then add all the ingredients and mix until smooth.

3. Grease a baking dish with vegetable oil, put the mixture in, and microwave for 4 minutes.

4. Take the bread out of the mold, place it on a plate with the top on top, and microwave for another 30 seconds. Cover the finished bread with a clean towel and let it cool.
