Healthy eggplant cream soup: what to serve with a delicious dish
Seasonal eggplants can be used to make a variety of snacks and preserves. They also make a very nutritious and light cream soup. It contains many different vegetables and spices.
The idea of making a hearty eggplant cream soup was published on the Instagram page of food blogger Vitalina Vorotniuk (vita vorotniuk). It is delicious served with croutons.
Ingredients:
- medium eggplant - 2 pcs.
- onion - 1 pc.
- carrot - 1 pc.
- garlic - 2 cloves
- oil
- water - 0.8-1 liter
- cream 15-20% - 100 ml.
- allspice
- bay leaves
- salt + pepper - to taste
- homemade croutons with hops suneli
Method of preparation:
1. Fry onions and carrots in a saucepan until golden brown.
2. Add the garlic. Fry for another minute.
3. Add water, allspice and bay leaf.
4. Cook the broth for 15 minutes until the carrots are tender.
5. Cut the eggplant in half.
6. Drizzle with oil and salt.
7. Put in the oven at 200 degrees for 25-30 minutes.
8. It is important that the eggplant is sufficiently burnt.
9. When the eggplant is cooked, scoop out the flesh with a spoon.
10. Remove the bay leaves and pepper from the broth.
11. Add the eggplant pulp. Blend with a blender.
12. Add 100 ml of cream, salt and pepper to taste.
13. Heat the soup, serve with homemade croutons with hops suneli.
