Healthy cream of zucchini soup for lunch: you don't even need meat
Zucchini is often used to make a variety of appetizers, casseroles, and preserves. This vegetable can also be the basis for a nutritious cream soup that is perfect for lunch. You don't even need meat for this dish.
The idea of making a zucchini cream soup for lunch was published on the Instagram page of the famous Ukrainian chef Liza Glinskaya (lizaglinskaya). Be sure to make crispy croutons for this dish.
Ingredients:
- onion - 2 pcs.
- carrot - 1 pc.
- potatoes - 3 pcs.
- zucchini - 4 pcs.
- garlic - 3 cloves
- processed cheese - 150 g
- vegetable oil and butter for frying
- salt - to taste
- parsley
Method of preparation:
1. Finely chop the onion and garlic.
2. Chop or grate the carrots.
3. Peel the zucchini and potatoes and cut them into small pieces.
4. Fry onion and garlic in a mixture of oil and butter.
5. When the onion is transparent and slightly golden, add carrots, potatoes, zucchini.
6. Add water to almost cover the vegetables. Add salt.
7. Cover and leave on low heat for 30 minutes.
8. Add grated processed cheese. Stir and leave on low heat for another 5 minutes.
9. Beat the cream soup with an immersion blender until smooth.
10. At this stage, bring the cream soup to taste, add salt if necessary.
11. Cream soup can be served with croutons, fried bacon and parsley.
