Healthy and tasty tomato soup with seafood: we share a simple recipe
Tomatoes are an ideal vegetable for making delicious salads, as well as sauces and soups. They are also salted and pickled for the winter and make delicious juice.
Cook Anna (anny.cooking) shared a recipe on Instagram for a delicious tomato and bell pepper soup that will be very healthy and tasty.
Ingredients:
- ripe sweet tomatoes – 3 pcs
- garlic – 3 cloves
- bell pepper – 1 pc
- purple/onion/leek – 1 pc
- broth – 250-300 ml
- olive oil, salt, pepper, oregano – to taste
Garnish: Parmesan cheese, fried bacon, fresh basil, fried bread.
Method of preparation:
1. Peel the vegetables, chop them, pour over with vegetable oil, and salt, add oregano, and bake at 200 degrees for 40 minutes.
2. Cooling.
3. Remove the skin from the tomatoes and peppers, add the broth, and blend everything in a blender.
4. If there are large pieces left, you can pass the soup through a sieve, and after whipping, be sure to boil it. Add salt, pepper, and a little oregano if desired.
The soup is best served with toasted bread, bacon, cheese, and you can also add cream and seafood, it will be delicious!
