Healthy and tasty meatball soup for children – a recipe from Sava Libkin
Soup is a very healthy dish that can be eaten at any time – for breakfast, lunch, and dinner. Vegetable, meat, and fish soups are especially healthy, and you can cook them for children with meatballs, which is one of the lightest meat soups.
Ukrainian restaurateur and chef Sava Libkin shared on his YouTube channel useful tips on how to make a delicious, hearty, cheese soup with meatballs for children, as well as his signature recipe (to watch the video, scroll to the end).
The chef says that the main advantage of this soup is its ease of preparation, but despite this, it has many variations.
"Meatballs – balls of minced meat – should not be confused with noisettes. In addition to meat, meatballs contain only a little onion, herbs, and spices. Rice is added to the minced meat for noisettes. They also have different cooking methods. Noisettes are fried or stewed, while meatballs are boiled in broth or soup," Libkin said.
Recipe for soup with meatballs
Ingredients:
- chicken fillet for minced meat - 2 pcs.
- rice - 1-2 tbsp.
- potatoes - 3-4 pcs.
- onion - 1 pc.
- carrots - 2-3 pcs.
- garlic - 2-3 cloves.
- eggs - 1 pc.
- sweet red pepper - 1 pc.
- cabbage - 1/2 pc.
- herbs - dill, parsley - 1 bunch
- Parmesan cheese - 30-40 g
- sour cream - 1-2 tbsp.
- salt, pepper - to taste
Method of preparation:
- Wash and boil the rice for the minced meat – about 2-3 minutes.
- Peel the potatoes, cut them into cubes, wash them well, and start cooking.
- Chop the fillet and add it along with half an onion and parsley to a meat grinder, put the minced meat in a bowl, add the rice and one egg yolk, season well with salt and pepper, and mix thoroughly.
- Grate the carrots and add them to the pot with the potatoes.
- Slice the garlic into thin slices, chop the onion, and add it all to the pot, no need to fry anything.
- Wash the peppers and chop them very finely, add them to the soup.
- Chop the cabbage finely.
- Form meatballs with your hands and add them to the boiling soup, cook until they float.
- Add the green young peas, chopped green onions, and cabbage to the soup and stir.
- At the very end, add 20 g of butter and herbs to the soup, stir, and let the soup stand for a while.
- Grate the Parmesan cheese.
- Chop the herbs very finely.
- Pour the soup into a bowl, sprinkle with parmesan, and a little herbs and add sour cream.
You can serve a flavorful and tasty, and most importantly, healthy soup.
