Healthy and simple beet salad with delicious dressing
Beetroot is one of the simplest, affordable and very healthy vegetables that can be the basis for salads, sauces, shpundra, as well as borscht and Shuba. It is worth noting that it is better to bake beets rather than boil them as they will be much healthier and will not give off bitterness.
Cook Halyna (reeixit) shared a recipe for a healthy beet salad with hard cheese, herbs and pesto sauce, which will give the dish a special flavor, on Instagram.
Ingredients:
- beets - 3-4 pcs.
- hard cheese - 150-200 g
- fresh parsley or other herbs - a bunch
Dressing:
- olive oil - 70-80 g
- pesto sauce - 50-70 g
Method of preparation:
1. Boil or bake the beets. Peel and cut them into strips.
2. Cut the hard cheese into strips.
3. Transfer to a bowl, drizzle with olive oil and pesto sauce, and stir to combine. Sprinkle with herbs and mix again.
Sprinkle with any seeds before serving!
