Grated cottage cheese and jam pie: how to make a new summer dessert

One of the simplest, most successful, tasty, and easy-to-make desserts is grated pie, based on shortcrust pastry and jam. If you want to make it in a new way, just add new ingredients, such as cheese, berries instead of jam, or fresh fruit.

Cook Anastasia shared a recipe for a delicious grated pie with cottage cheese, blueberries, and strawberries on Instagram.

Ingredients:

  • flour - 300 g
  • baking powder - 1/2 tsp.
  • eggs - 1 pc.
  • sour cream - 1 tsp.
  • baking powder - 1/2 tsp.
  • powdered sugar - 50 g
  • vanilla sugar - 1 tsp
  • salt - a pinch

The curd layer:

  • cottage cheese - 400 g
  • sugar - 3 tbsp.
  • semolina - 2 tbsp. 

Filling:

  • blueberry and strawberry jam

Method of preparation:

1. Combine the flour, salt, powdered sugar, vanilla sugar and baking powder.

2. Add the cold, chopped butter and cut it into fine crumbs with your hands and flour.

3. Add sour cream, and egg and knead the dough.

4. Divide the finished dough into 2 parts and refrigerate until it cools completely for 1-2 hours.

5. For the cheese layer: combine all the ingredients in a bowl and beat with a blender until smooth.

6. Cover a 24 cm diameter baking dish with parchment.

7. Grate and spread one part of the dough, bake for 10 minutes at 180 C, and cool.

8. Pour the curd layer, spread the jam on top, grate the second part of the dough, and spread it over the jam.

9. Bake the cake at 180 C for 35 minutes.

Be sure to let the cake cool completely and then cut it.
