German, Austrian or Italian: where does schnitzel come from and how to cook it

Schnitzel is a hearty dish made from a whole large piece of meat. It is served in various interpretations around the world. In Ukraine, it is most popular in Western Ukraine. Men especially like this culinary masterpiece because it is very nutritious and the portion is quite large.

There are many options for the origin of schnitzel: some say it is an Austrian dish. Some believe that the delicacy began to be cooked in Italy. But it is German schnitzel that has become the most popular all over the world because it is there that they began to cook it not only from veal, but also from chicken, pork, and turkey. This dish is served in the best and most expensive restaurants in the world.

While Viennese schnitzel is served plain, Germans like to serve the dish with a variety of sauces: jägerschnitzel with mushroom sauce, zigeunerschnitzel with bell pepper sauce, and rachmschitzel with cream sauce. It tastes perfect with fried potatoes and French apple wine.

Ingredients:

  • Chicken fillet - 1 pc.
  • Breadcrumbs - 1 cup
  • Egg - 2 pcs.
  • Vegetable oil - 3 tbsp.
  • Butter - 20 g

Spices:

  • Salt - 0.5 tsp.
  • Paprika - 2 tsp.
  • Dry garlic - 0.5 tsp.
  • Parmesan - 5 tsp.

Method of preparation:

  1. In one bowl, mix the breadcrumbs and all the spices.
  2. In another, beat the eggs.
  3. Cut the fillet in half lengthwise, and beat off a little.
  4. Dip the fillet in the bowl with the egg, then in the breadcrumbs, and again in the egg and breadcrumbs.
  5. Press the breading with your hands.
  6. Fry the fillet pieces in a frying pan with well-heated oil for 1-2 minutes on each side and put in the oven at 180 degrees for 10-12 minutes.

Preparation of the sauce

  1. Finely chop the onion.
  2. Fry in vegetable oil until soft, add sour cream.
  3. Finely chop pickles and French mustard.
  4. Mix everything.

The secret to juicy meat

To prevent the dish from turning out dry, do not overcook it in the oven. It's better to put it in for a little less time and check readiness with a toothpick (if clear juice comes out, the schnitzel is ready), and finish cooking it if necessary.

Ingredients:

  • Pork
  • Mayonnaise / marinade for meat
  • Salt
  • Pepper
  • Garlic
  • Seasoning for meat
  • Eggs
  • Breadcrumbs

Method of preparation:

  1. Cut the meat into large pieces, beat off, and sprinkle with seasoning.
  2. Crush the garlic in a garlic press and rub it over the meat.
  3. Marinate the meat for 20 minutes in mayonnaise or meat marinade.
  4. Before frying, dip the meat in an egg and then in breadcrumbs.
  5. Fry until golden brown.
