Georgian chicken chikhirtma: how to make an unusual hangover soup

Chikhirtma in Georgian is a hearty chicken soup that is said to cure the body of illness and hangovers. Chikhirtma is distinguished by a variety of spices and herbs and a special frying method that makes the dish thick and rich.

Food blogger Daryna Gryshchenko (daryna_h_h) shared a recipe for Georgian chikhirtma soup with chicken on her Instagram page.

Georgian chikhirtma recipe

Ingredients:

  • chicken - 1-1.5 kg
  • onions - 3 pcs
  • butter - 30 g
  • vegetable oil - 1 tbsp
  • lemon - 1 pc
  • eggs - 4 pcs
  • corn flour - 3-4 tbsp
  • turmeric - 1\2 tsp.
  • coriander - 1\2 tsp.
  • bay leaves - 2 pcs
  • allspice - 3 pcs
  • parsley, dill
  • salt, pepper
  • cilantro \ dried mint

Method of preparation:

1. To prepare the broth, cut the chicken, cover it with water, put it on the fire and bring to a boil.

2. Then drain the water, pour in new water, add bay leaves, salt and allspice. Boil the broth for 1-2 hours.

3. Meanwhile, chop the onion, fry with butter and vegetable oil until transparent.

4. Add turmeric, coriander and flour to the onion. Fry for 1 minute.

5. Add a few ladles of broth to the frying.

6. Beat eggs with lemon juice in a separate bowl.

7. Remove the chicken from the broth, separate the meat from the bones and return the meat to the broth.

8. Then add the onion and egg mass to the broth. Bring to a boil.

9. When the soup boils, add the herbs.
