A delicious lunch can be prepared quite quickly if you choose light dishes, such as a hearty salad, soup, lazy salt pie, or vegetable stew. But if you love tomatoes, cold, flavorful gazpacho will be the best summer lunch option.
FoodOboz has prepared for you a delicious and at the same time spicy gazpacho recipe with tomatoes, cheese, and strawberries, the taste of which will definitely surprise you.
Ingredients:
- tomatoes in their own juice - 500 g
- tomato juice - 200 g
- fresh peeled cucumbers - 50 g
- strawberries - 40 g
- bread crumb - 30 g
- onions - 15 g
- table vinegar - 5 g
- olive oil - 10 g
- salt - 5 g
- sugar - 10 g
- burrata - 200 g
- basil - 1 sprig
- bread - 100 g
- ice - 10 cubes
Method of preparation:
- Whisk all the ingredients in a blender until smooth: tomatoes, tomato juice, strawberries, onions, bread crumbs, and cucumbers.
- Afterwards, strain everything through a sieve and add olive oil, vinegar, salt, and sugar to the finished soup, mix everything thoroughly.
- Cut the bread and put it in the oven to make crispy croutons.
Before serving, add cheese, basil, ice, and croutons to the soup.
