Marshmallows are a delicacy with a variety of flavors. There are a lot of them in stores: fruit, vanilla, chocolate. But these marshmallows usually contain a lot of dyes and preservatives.

Today, the FoodOboz editorial team is sharing a recipe for fruit marshmallows from Anna Davydenko, which the food blogger posted on her Instagram page.

Ingredients:

For the base:

  • Apple puree - 250 g (or other fruit)
  • Sugar - 150 g
  • Egg white - 1

For the syrup:

Sugar - 400 g

Water - 150 g

Agar-agar - 8-9 g

Method of preparation:

  1. Blend the fruit in a blender, and cook until thick.
  2. Cut the apples in half, remove the core, put them on parchment with the cut side down, and bake in the oven at 200 degrees for 25-30 minutes. Grind into a puree with a blender.
  3. Cool the mashed potatoes, add sugar, and add the egg white.
  4. Pour agar-agar into the water and stir so that there are no lumps. Leave for 10 minutes.
  5. Put the water and agar-agar on the stove and stir. As soon as it boils, add sugar. Stirring, cook over low heat.
  6. Blend the puree: for 2 minutes at low speed to mix all the ingredients, and then at maximum speed. The puree should be thick.
  7. Boil the syrup for 10-15 minutes, and add it to the puree in a thin stream.
  8. Continue whisking until the temperature of the mass reaches about 40 degrees.
  9. Transfer the mixture to a pastry bag and wait for it to cool.
  10. Form marshmallows and leave for 10 hours, or preferably overnight.
  11. Connect the halves and sprinkle with powdered sugar.
