In Ukrainian cuisine, fried pies are given special attention. This dish is prepared with a variety of both sweet and savory fillings for celebrations or family gatherings. They are a real symbol of family warmth, comfort and mom's love. But in order for the pies to be crispy, they need to be made from the right dough.

The idea of making crispy fried pies was published on the Instagram page of food blogger Valentyna (valya__saenko).

For 10 pieces:

Starter:

  • flour - 50 g
  • sugar - 1 tbsp
  • salt - 0.5 tsp
  • oil - 30 g
  • boiling water - 120 g

Dough:

  • dry yeast - 4 g
  • sugar - 5 g
  • warm water - 60 g
  • yolk - 1 pc
  • flour - 250 g

Method of preparation:

1. First, make the starter: mix all the dry ingredients and pour boiling water and oil over them.

2. Mix it all with a whisk. You will get a paste with a small amount of lumps which are normal. Set aside to cool a bit.

3. Meanwhile, knead the dough. Mix yeast, sugar and 100 g of flour together and add warm water.

4. Let the dough stand warm for 10 minutes.

5. When bubbles appear, add the starter, 1 egg yolk and the rest of the flour.

6. Knead well. The dough should be elastic and slightly sticky to your hands. Do not add flour so that the dough is loose.

7. Grease your hands with oil and the dough will not stick.

8. Put the dough in a bowl greased with vegetable oil, cover with a towel and let it stand in a warm place for 1 hour.

9. Then take it out, knead the dough, grease your hands and the table with vegetable oil, and divide it into 10 pieces.

10. Do not roll out the dough with a rolling pin but knead it and form pies with your hands. Do not shape them too thinly as the dough is delicate and can tear.

11. Make a circle-like shape, put the filling on top, close it like for a dumpling and carefully roll it over.

12. Fry the pies immediately in a large amount of oil over medium heat so that they have time to fry (3-4 minutes).

You can use any filling as long as it is dry enough.
