1. Apricot pie with pistachios

How to cook a delicious apricot pie at home

Ingredients:

  • Eggs - 2 pcs.
  • Sugar - 150 g
  • Butter - 80 g
  • Sour cream - 80 g
  • Pistachios or nuts - 50 g
  • Flour - 180 g
  • Baking powder - 1 tsp
  • Vanilla sugar - 10 g
  • Apricots - 5-8 pcs.

Method of preparation:

  1. Beat eggs with sugar, add melted butter and sour cream, and mix well.
  2. Chop the nuts and add them to the mixture.
  3. Sift the flour twice, add the baking powder, mix, and add to the egg mixture.
  4. Wash the apricots and separate the pits.
  5. Grease a baking dish with butter, pour in the batter, and put the apricot slices on top.
  6. Put in the oven for 40 minutes at 170-180 C.

Let the cake cool and sprinkle with powdered sugar before serving.

Ingredients:

  • Shortbread cookies - 150 g
  • Sugar - 200 g
  • Eggs - 2 pcs.
  • Nutmeg - 1/4 tsp.
  • Vanilla - a pinch
  • Butter - 100 g
  • Apricots - 10 pcs
  • Lemon juice - 1-2 tbsp
  • Sour cream - 100 g
  • Cream cheese - 450-500 g
  • Salt - a pinch

Method of preparation:

  1. Put the biscuits in a blender, add sugar, and salt, and beat until smooth.
  2. Transfer to a large bowl, add the melted butter, and mix.
  3. Put the finished dough into a baking dish, put it in the oven, and bake for 15 minutes at 180 C.
  4. Take out and cool.
  5. Wash the apricots, remove the pits, and peel them.
  6. Put them in a saucepan, add 50 g of sugar, salt, and water, and cook constantly stirring until the sugar dissolves.
  7. Afterward, put the boiled apricots in a blender, add lemon juice and water and whisk until smooth.
  8. Beat the cottage cheese and sour cream with a mixer, add sugar, vanilla, and salt, and mix thoroughly.
  9. Gently add the eggs.
  10. Put the finished egg and cream mixture on the base of the cake, and top it with apricot puree.
  11. Put the cake in the oven for 25 minutes at 150-160 C.
  12. Then cool and refrigerate for 2 hours.
