Autumn is the perfect time to prepare delicious, flavorful, hearty dishes from seasonal products, with mushrooms occupying a special place among them. They can be used to make many different dishes, ranging from soups and stews to pies, risotto, flavorful salads and pies. Mushrooms can also be pickled, frozen and dried for the winter.
Chef Valentyna Sayenko shared a recipe for a delicious appetizer pie with mushrooms, cheese, garlic, and herbs on Instagram.
Ingredients:
- Flour - 250 g
- Butter - 125 g
- Cold water - 2 tbsp.
- Egg - 1 pc.
- Salt - to taste
For the filling:
- Chanterelles - 350 g
- Onion - 1 pc.
- Cream from 20% - 250 g
- Eggs - 3 pcs.
- Hard cheese - 150 g
- Garlic - 2 cloves.
- Butter - 1 tbsp.
- Salt and pepper - to taste
- Herbs - thyme, parsley and tarragon
Method of preparation:
1. For the dough: mix all the ingredients, grate the butter, knead a smooth dough and refrigerate for 30 minutes.
2. Peel, wash and cut the chanterelles into large pieces. Finely chop the onion and fry until golden brown, add the mushrooms and fry over medium heat until all the moisture has evaporated.
3. Add garlic, a little thyme, and salt. When the moisture has evaporated, add a spoonful of butter.
4. In a separate bowl, mix the cream, eggs, salt and pepper until smooth.
5. Roll out the dough on a floured table, put it in the mold, sprinkle with cheese, more than half of it. Put chanterelles on top and cheese again. Pour the cream and eggs over the top and bake at 180 °C for about 40 minutes.
Let the cake cool, sprinkle with herbs before serving, and you're ready to eat!
